Okay, these are not necessarily healthy but I figure if you’re going to have a unhealthy treat, the least you can do is make it from scratch. This recipe was adapted from Robb Wolf’s site. I have to admit, this is less healthy than the original but it was based on the ingredients I had on hand at the time.
Prep time:
– 5 minutes
Bake time:
– 22 minutes at 375F
Ingredients:
– 2 cups all-purpose gluten-free flour
– 1/4 cup oat flour
– 2 tsp cinnamon
– 1 tsp baking soda
– 1 tsp baking powder
– 1 tsp xanathan gum
– 4 really ripe bananas*
– 4 tbsp maple syrup
– 4 eggs
* I’ve also tried this recipe where I substituted a baked sweet potato for one of the bananas, with peel removed.
Instructions:
– Preheat oven to 375F
– Coat muffin tin with butter
– Mix dry ingredients together
– Put wet ingredients into blender until consistent
– Mix wet ingredients into dry until combined
– Use an ice cream scoop to fill the muffin tins
– Bake for 22 minutes (depending on your oven)
I usually find this recipe makes a bakers dozen. I always get 12 good sized muffins plus a bit of batter left over.
